Ingredients

  • 1 large head cauliflower, cut into florets
  • 23 tablespoons (30-45ml) avocado oil, divided
  • 1 teaspoon sea salt
  • 1 tablespoon curry powder
  • ½ teaspoon maple syrup (optional)

Optional Garnishes:

  • Fresh cilantro
  • Toasted almonds
  • Tahini drizzle

Instructions

  • Preheat the oven to 450°F (232°C).
  • Cut the cauliflower into even-sized florets.
  • Toss the cauliflower with 1 tablespoon of oil, salt, curry powder, and maple syrup (if using).
  • Heat a large oven-safe skillet over medium-high heat and add the remaining oil.
  • Sear the cauliflower for about 5 minutes until golden.
  • Transfer the pan to the oven and roast for 10-15 minutes, tossing every 5 minutes for even browning.
  • Garnish with cilantro, toasted almonds, or a tahini drizzle, and serve immediately.
