4 large flour tortillas
½ cup pizza sauce
1 cup shredded mozzarella cheese
½ cup chopped vegetables (bell peppers, onions, mushrooms, etc.)
½ cup beef pepperoni or cooked ground beef (optional)
½ teaspoon Italian seasoning
2 tablespoons unsalted butter, melted
Olive oil or nonstick spray (for cooking)
Preheat the Skillet: Heat a large nonstick skillet or griddle over medium heat.
Assemble the Pockets: Lay a tortilla flat and spread 2 tablespoons of pizza sauce on one half, leaving a small border. Top with mozzarella cheese, chopped vegetables, and optional meat. Sprinkle with Italian seasoning.
Fold and Brush: Fold the tortilla in half into a semicircle. Brush the outside of each folded tortilla with melted butter.
Cook: Place the pockets in the skillet and cook for 2–3 minutes per side until golden and crisp. Press gently with a spatula to ensure even browning.
Serve: Slice the pockets in half and serve hot with extra pizza sauce for dipping.
Toppings: Customize with your favorite pizza toppings like olives, jalapeños, or pineapple.
Meat Options: Skip the meat or use sausage, chicken, or turkey for different flavors.
Dipping Sauces: Serve with ranch, garlic butter, or extra pizza sauce for dipping.
Storage: Store leftover pizza pockets in an airtight container for up to 2 days in the fridge. To reheat, place them in a skillet over medium heat for 1–2 minutes per side.
Freezing: After assembling, freeze the pockets in a single layer, then transfer them to a freezer-safe bag. Thaw and cook in the skillet when ready to eat.
