Crispy-Cheesy Tortilla Pizza Pockets are a fun, easy-to-make snack or meal, combining the crispy crunch of tortillas with the gooey melt of mozzarella, pizza sauce, and delicious toppings. Perfect for quick dinners, party appetizers, or a satisfying snack, these pizza pockets are customizable, kid-approved, and freezer-friendly for future meals.

Ingredients

4 large flour tortillas

½ cup pizza sauce

1 cup shredded mozzarella cheese

½ cup chopped vegetables (bell peppers, onions, mushrooms, etc.)

½ cup beef pepperoni or cooked ground beef (optional)

½ teaspoon Italian seasoning

2 tablespoons unsalted butter, melted

Olive oil or nonstick spray (for cooking)

Instructions

  1. Preheat the Skillet: Heat a large nonstick skillet or griddle over medium heat.

  2. Assemble the Pockets: Lay a tortilla flat and spread 2 tablespoons of pizza sauce on one half, leaving a small border. Top with mozzarella cheese, chopped vegetables, and optional meat. Sprinkle with Italian seasoning.

  3. Fold and Brush: Fold the tortilla in half into a semicircle. Brush the outside of each folded tortilla with melted butter.

  4. Cook: Place the pockets in the skillet and cook for 2–3 minutes per side until golden and crisp. Press gently with a spatula to ensure even browning.

  5. Serve: Slice the pockets in half and serve hot with extra pizza sauce for dipping.
