1 lb chicken breasts or chicken tenders, cut into strips

2 large eggs, beaten

1 cup panko breadcrumbs or regular breadcrumbs

½ cup grated Parmesan cheese (optional)

1 tsp garlic powder

1 tsp paprika

½ tsp onion powder

½ tsp salt

¼ tsp black pepper

Olive oil spray for coating

Instructions

  • Prep the Chicken:
Cut chicken breasts into strips if using whole breasts.

  • Prepare the Breading Stations:
In one bowl, beat eggs. In another, combine breadcrumbs, Parmesan (if using), garlic powder, paprika, onion powder, salt, and pepper.

  • Season the Chicken:
Season chicken strips with salt and pepper.

  • Bread the Chicken:
Dip each chicken strip into the egg, then coat with the breadcrumb mixture. For extra crunch, double dip.

  • Prepare the Baking Sheet:
Line a baking sheet with parchment paper or a silicone mat. Place a wire rack on top if available.

  • Arrange the Chicken:
Place breaded chicken on the prepared sheet, ensuring space between each piece.

  • Bake the Chicken Tenders:
Preheat oven to 400°F (200°C). Lightly spray the tenders with olive oil spray and bake for 20-25 minutes, flipping halfway through, until golden brown and cooked through (internal temperature of 165°F or 74°C).

  • Serve and Enjoy:
Let the chicken rest for a few minutes before serving with your favorite dipping sauces.
