Ideal as a snack, appetizer, or side dish, this recipe is simple to make and full of flavor. The crispy potatoes and smooth yogurt sauce create a deliciously satisfying combination that’s perfect for any occasion.

Ingredients

For the Potato Bites:

  • 3 potatoes
  • 1 teaspoon paprika
  • Black pepper to taste
  • 100 grams cornstarch (3.5 oz)
  • Fresh parsley, chopped
  • Olive oil for frying
  • Salt to taste

For the Herb Yogurt Sauce:

  • 3 tablespoons Greek yogurt
  • A bunch of fresh dill, chopped
  • 1 tablespoon soy sauce
  • 1 tablespoon mayonnaise

Instructions

  • Prepare the Potatoes: Peel the potatoes and cut them into bite-sized pieces. Rinse and pat them dry with a paper towel.
  • Season the Potatoes: In a large bowl, toss the potato pieces with paprika, black pepper, and salt. Add the cornstarch and toss until the potatoes are well-coated.
  • Fry the Potatoes: Heat a generous amount of olive oil in a large skillet over medium-high heat. Once the oil is hot, add the potato pieces in batches, being careful not to overcrowd the pan. Fry until golden brown and crispy, about 5-7 minutes per batch. Remove with a slotted spoon and drain on paper towels.
  • Prepare the Sauce: While the potatoes are frying, make the herb yogurt sauce by combining Greek yogurt, chopped dill, soy sauce, and mayonnaise in a small bowl. Mix until smooth.
  • Serve: Arrange the crispy potato bites on a serving platter and sprinkle with freshly chopped parsley. Serve with the herb yogurt sauce on the side for dipping.

Notes

  • Add garlic powder, onion powder, or smoked paprika to the potatoes for different flavor profiles.
  • For a lighter version, use less oil or opt for baking the potatoes instead of frying them.
  • You can customize the yogurt sauce with lemon juice or swap the dill for fresh basil or cilantro.
