Ingredients

For the Casserole:

  • ½ cup butter, divided
  • 2 celery ribs, finely chopped
  • 1 small onion, finely chopped
  • 2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
  • 1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
  • 2 cups cubed bread (1/2 inch)

Instructions

  • Preheat Oven: Set the oven to 350°F (175°C).
  • Cook the Vegetables: In a large skillet, heat ¼ cup butter over medium heat. Add chopped celery and onion, cooking until tender (about 4-5 minutes).
  • Add Spinach and Soup: Stir in the thawed and squeezed spinach, followed by the cream of mushroom soup. Mix well.
  • Transfer to Baking Dish: Transfer the spinach mixture into a 1-1/2-quart round baking dish.
  • Prepare Topping: In a small saucepan, melt the remaining butter over medium heat. Stir in the bread cubes, ensuring they’re coated with butter.
  • Top and Bake: Sprinkle the buttered bread cubes over the spinach mixture. Bake for 35-40 minutes, until bubbly and the bread cubes are golden brown.
