This Crustless Pizza Bake is a low-carb, gluten-free alternative to traditional pizza! Packed with cheesy goodness, hearty toppings, and rich marinara sauce, it’s a quick and easy meal ready in just 30 minutes—perfect for busy weeknights or meal prep.

Ingredients

For the Base:

  • 1 jar (24 oz) RAO’s marinara (or your favorite marinara sauce)
  • 3 cups mozzarella cheese, shredded
  • 1 lb ground Italian sausage (or your preferred meat combo)
  • 1 green bell pepper, chopped
  • 1 cup mushrooms, sliced
  • 1 small onion, chopped

Optional Toppings:

  • Pepperoni
  • Black olives
  • Jalapeños
  • Smoked turkey slices

Instructions

1. Preheat the Oven:

  • Set your oven to 400°F (200°C).

2. Prepare the Baking Dish:

  • Spread ½ cup marinara sauce evenly over the bottom of a 9×13-inch baking dish.

3. Cook the Meat:

  • In a skillet over medium heat, cook the Italian sausage until browned. Drain excess grease if necessary.

4. Mix the Toppings:

  • In a large bowl, combine the cooked meat, bell pepper, mushrooms, onions, 1 cup of mozzarella cheese, and 1 cup of marinara sauce. Mix well.

5. Assemble the Dish:

  • Pour the topping mixture into the prepared baking dish and spread it evenly.
  • Sprinkle the remaining 2 cups of mozzarella cheese over the top.

6. Bake:

  • Place the dish in the oven and bake for 20 minutes until the cheese is melted and bubbly.

7. Broil (Optional):

  • For a golden, crispy top, broil for an additional 3-5 minutes.
