Ingredients

For the Sandwiches:

  • ½ seedless cucumber, peeled and cut into -inch-thick slices
  • 16 slices thin-sliced white bread (crusts removed)
  • Herb Aïoli (see recipe below)
  • Garnish (optional): sliced cucumbers, sliced radishes, asparagus, celery leaf

For the Herb Aïoli:

  • 1 ½ cups mayonnaise
  • 1 teaspoon chopped fresh dill
  • 1 teaspoon chopped fresh parsley
  • 1 teaspoon chopped fresh thyme
  • 1 teaspoon chopped fresh chives

Instructions

  • Prepare the Cucumber: Place cucumber slices between layers of paper towels to absorb excess moisture.

  • Prepare the Aïoli: In a bowl, combine mayonnaise with dill, parsley, thyme, and chives. Mix well.

  • Assemble the Sandwiches: Spread a thin layer of the prepared herb aïoli on each slice of bread. Arrange cucumber slices on top of the aïoli on eight slices of bread. Top with the remaining bread slices to form sandwiches.

  • Cut and Garnish: Cut each sandwich into quarters. Garnish with extra cucumber slices, radishes, asparagus, or celery leaf, if desired.

  • Serve: Serve immediately and enjoy the light, refreshing flavors.
