Soft, pillowy Dad’s Breakfast Bread with a cinnamon-roll-like dough that’s fried to a crispy golden perfection. Perfect for a comforting, nostalgic breakfast or snack served with honey, jam, or powdered sugar.

Ingredients

2 cups milk, scalded and cooled

1 cup white sugar

2 tablespoons margarine, melted

1 teaspoon salt

2 (0.25 ounce) packages active dry yeast

½ cup warm water

2 eggs, beaten

7 cups all-purpose flour

3 cups oil for frying

Instructions

  1. In a large bowl, stir together the scalded milk, sugar, margarine, and salt.
  2. In a small bowl, combine yeast and warm water. Let stand for 10 minutes or until foamy.
  3. Stir the yeast mixture into the milk mixture. Blend in the beaten eggs.
  4. Add flour one cup at a time, mixing until a soft dough forms.
  5. Cover the bowl and let the dough rise in a warm place until doubled in size.
  6. Heat about 1 inch of oil in a deep heavy skillet to 370°F (180°C).
  7. Form large handfuls of dough into flat pancake shapes.
  8. Fry dough pancakes in hot oil, turning once, until golden brown on both sides.
  9. Remove from oil and drain on paper towels.
  10. Serve warm, with honey, jam, or a sprinkle of powdered sugar.

Notes

Add cinnamon or nutmeg to the dough for extra flavor.

Mix in raisins or dried fruit for a fruity twist.

Serve with cream cheese spread or butter for savory options.

Dust generously with cinnamon sugar instead of powdered sugar.

Frying is traditional, but baking at 375°F for 15-20 minutes can be an alternative.

Freeze cooked pieces in airtight containers for up to 1 month; thaw and reheat before serving.
