Ingredients

2 cups all-purpose flour

1/2 cup unsweetened cocoa powder

1 cup granulated sugar

2 tsp baking powder

1 tbsp espresso powder

2 large eggs

1 cup whole milk (or almond milk)

1/2 cup melted butter (or coconut oil)

1 tsp vanilla extract

1 cup dark chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, and espresso powder.
  3. In another bowl, beat together eggs, milk, melted butter, and vanilla until smooth.
  4. Gradually add the wet mixture to the dry ingredients, stirring gently until just combined.
  5. Fold in the dark chocolate chips.
  6. Pour batter into the prepared loaf pan and bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Add chopped nuts for extra crunch.

Drizzle a powdered sugar glaze over the cooled loaf for added sweetness.

Increase espresso powder for a stronger coffee flavor.

Try white or milk chocolate chips instead of dark chocolate.

Use half brewed coffee and half milk for deeper flavor.
