1 ½ cups pitted dates, chopped

1 cup hot water

1 teaspoon baking soda

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 cup all-purpose flour

½ teaspoon baking powder

¼ teaspoon salt

1 teaspoon ground cinnamon

½ cup walnuts, chopped

2 tablespoons instant coffee granules

2 tablespoons milk

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. Prepare the Date Mixture: In a bowl, combine the chopped dates and hot water. Stir in the baking soda, then let the mixture sit for about 10 minutes to soften.
  3. Cream Butter and Sugar: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Incorporate Eggs: Add the eggs one at a time, mixing well after each addition to ensure everything is fully incorporated.
