These Delicious Roasted Cherry Brownies combine rich chocolate brownies with the enhanced sweetness of roasted cherries. The caramelized cherries add a beautiful depth to the fudgy brownies, making them a delightful treat for any occasion.

Ingredients

2 cups fresh cherries, pitted

¾ cup unsweetened cocoa powder

1 cup all-purpose flour

1 cup granulated sugar

2 large eggs

½ cup unsalted butter, melted

1 teaspoon vanilla extract

Instructions

  1. Preheat the Oven and Roast the Cherries: Preheat your oven to 400°F (200°C). Arrange the pitted cherries on a baking sheet in a single layer. Sprinkle the cherries with sugar, then roast for 15-20 minutes, or until caramelized and tender.
  2. Prepare the Brownie Batter: In a bowl, melt the butter and mix with granulated sugar. Add eggs one at a time, beating well after each addition. Stir in the vanilla extract, then gently stir in flour and cocoa powder until combined.
  3. Fold in the Roasted Cherries: Once the cherries are roasted and slightly cooled, gently fold them into the brownie batter. Be careful not to break them up too much.
