Ingredients

1 kilogram (2.2 pounds) unripe green figs

800 grams (4 cups) granulated sugar

1 liter (4 cups) water

Juice of 1/2 lemon

Instructions

  1. Prepare the Figs: Wash the figs, trim the stems, and blanch them in boiling water for 5 minutes. Drain and cool in cold water.
  2. Make the Syrup: In a pot, combine sugar and water. Bring to a boil over medium heat and cook for 10–12 minutes until the syrup thickens.
  3. Cook the Figs: Add the drained figs to the syrup and cook over low heat for 40–50 minutes, turning occasionally to coat evenly.
  4. Add Lemon Juice: After the figs soften and the syrup thickens, add lemon juice and simmer for another 5 minutes.
  5. Jar the Jam: Transfer the hot jam into sterilized jars, seal, and let cool at room temperature before storing.
