Delightful Marzipan Shortbread Cookies are buttery, crumbly, and delicately sweet with almond flavor. Topped with thin marzipan discs and finished with a dusting of powdered sugar, they’re simple to make yet elegant enough for holidays or tea-time treats.

Ingredients

1 cup unsalted butter, softened

3/4 cup granulated sugar

2 cups all-purpose flour, sifted

1 tsp almond extract

1/2 cup marzipan, rolled into thin discs

1/4 tsp salt

Powdered sugar, for dusting

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together softened butter and sugar until light and fluffy, about 3–5 minutes.
  3. Gradually mix in flour and salt until dough comes together (it may look crumbly but holds when pressed).
  4. Stir in almond extract until fully incorporated.
  5. Roll dough into small balls, place on prepared baking sheet, and gently flatten.
  6. Top each cookie with a thin disc of marzipan.
  7. Bake for 12–15 minutes, until edges are lightly golden.
  8. Cool on a wire rack and dust with powdered sugar before serving.
