Ingredients

  • 1 lb lobster meat (a mix of frozen lobster meat and canned lump lobster)
  • 1 lb shrimp (size 31-40, peeled and deveined)
  • 4 tablespoons butter
  • 8 oz sliced cremini mushrooms (optional)
  • 2 cups cream (18% or preferred)
  • ½ teaspoon cayenne pepper
  • 2 teaspoons paprika
  • ¼ cup Irish whiskey
  • 4 cups cooked white rice

Instructions

  • Prepare Lobster: Roughly chop lobster meat, leaving some large chunks for garnish.
  • Cook Seafood: In a large saucepan, melt butter over medium-high heat. Add lobster and shrimp, stirring in cayenne pepper and paprika. Sauté for 3-4 minutes until shrimp turn pink and opaque. Remove seafood from the pan and set aside.
  • Cook Mushrooms: Sauté sliced mushrooms until they release their liquid and dry up, about 8 minutes.
  • Flambé with Whiskey: Add Irish whiskey to the pan, light it with a BBQ lighter, and gently shake the pan until the flames die down.
  • Make the Sauce: Add cream to the pan, simmering for 5-10 minutes until the sauce thickens.
  • Finish the Dish: Return the seafood to the pan, warming it through for 3 minutes.
  • Serve: Spoon the seafood mixture over cooked rice, garnishing with larger lobster pieces on top.
