Easy and Zesty Key Lime Truffles are bite-sized tropical treats with a creamy white chocolate base, tangy key lime juice and zest, coated in crushed graham crackers. No-bake and simple to make, they’re perfect for parties, holidays, or as a refreshing dessert any time of year.

Ingredients

¼ cup heavy whipping cream

¼ cup sweetened condensed milk

4 tablespoons lime zest

2 cups white chocolate chips

2 tablespoons lime juice

1 tablespoon unsalted butter, softened

2 cups crushed graham crackers

Instructions

  1. In a medium bowl, whisk together heavy cream, sweetened condensed milk, and lime juice until smooth.
  2. Melt white chocolate chips in a microwave-safe bowl (30-second intervals) or a double boiler until smooth.
  3. Stir softened butter into the melted chocolate until fully combined.
  4. Fold in lime zest, then gradually add the wet mixture to the chocolate, mixing until smooth.
  5. Cover and refrigerate for at least 2 hours, until firm enough to shape.
  6. Scoop tablespoon-sized portions and roll into balls with damp hands.
  7. Roll each truffle in crushed graham crackers until fully coated.
  8. Chill again for 30 minutes before serving for best texture.

Notes

Add a few drops of pure lime extract for a richer lime flavor.

Increase lime zest for a tangier taste.
