Easy Buckeyes are classic no-bake peanut butter and chocolate candies with creamy centers and a glossy chocolate shell. Perfect for holidays, game day, or gifting, they’re simple to make and freezer-friendly for anytime indulgence.

Ingredients

1 1/2 cups creamy peanut butter (not natural)

1/2 cup unsalted butter, softened

1 teaspoon vanilla extract

1/4 teaspoon salt

3 1/2 to 4 cups powdered sugar

12 oz semi-sweet or dark chocolate chips

12 teaspoons shortening or coconut oil (optional, for smoother dipping)

Instructions

  1. In a large bowl, beat peanut butter, butter, vanilla, and salt until smooth and creamy.
  2. Gradually add powdered sugar, 1/2 cup at a time, until a stiff dough forms that isn’t sticky.
  3. Roll dough into 1-tablespoon balls and place on a parchment-lined baking sheet. Chill 30 minutes (or freeze 15–20 minutes) until firm.
  4. Melt chocolate chips with shortening/coconut oil in the microwave in 30-second bursts, stirring until smooth.
  5. Insert a toothpick into each peanut butter ball and dip three-quarters of the way into melted chocolate, leaving the top exposed for the “buckeye” look. Let excess drip off and return to tray.
  6. Optional: Smooth over the toothpick hole with a fingertip.
  7. Refrigerate 30 minutes, until chocolate is set. Store in an airtight container.

Notes

Use no-stir peanut butter for best texture; natural types are too oily.

Add maple extract or espresso powder for flavor twists.

Dip in white chocolate and drizzle with dark chocolate for variety.

Turn into bars by pressing mixture into a pan and topping with chocolate.

Freeze for up to 2 months; thaw in the fridge before serving.
