Easy Caprese Dip is a warm, cheesy appetizer featuring fresh tomatoes, basil, and gooey melted cheese. Inspired by the classic Caprese salad, this creamy and flavorful dip is perfect for parties, gatherings, or a quick and satisfying snack.

Ingredients

For the Dip:

  • 1 cup sour cream
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons basil pesto
  • 1 ½ cups fresh mozzarella cheese, cubed
  • ½ cup Parmesan cheese, grated
  • 1 cup cherry tomatoes, halved
  • 1 tablespoon olive oil
  • ½ teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh basil, chopped

Instructions

  • Roast the Tomatoes:
    • Preheat the oven to 400°F (200°C).
    • In a baking dish, toss the cherry tomatoes with olive oil, basil pesto, salt, pepper, and red pepper flakes.
    • Roast for 15 minutes until soft and slightly caramelized.
  • Prepare the Cheese Mixture:
    • In a bowl, mix sour cream, mozzarella, Parmesan, and fresh basil.
  • Assemble the Dip:
    • Remove the roasted tomatoes from the oven. Stir in the cheese mixture until well combined.
  • Bake:
    • Return to the oven and bake for 20 minutes, or until the cheese is melted, bubbly, and golden brown on top.
  • Garnish and Serve:
    • Sprinkle with additional fresh basil and serve with crusty bread, pita chips, or crackers.

Notes

  • Add Balsamic Glaze: Drizzle balsamic reduction on top before serving for extra depth of flavor.
  • Spice It Up: Increase the red pepper flakes or add chopped jalapeños for heat.
