Ingredients

2 cups fresh or frozen cherries, pitted and halved

½ cup granulated sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

¼ teaspoon cinnamon (optional)

1 tablespoon cornstarch (optional for thicker consistency)

2 tablespoons water (if using cornstarch)

Instructions

  1. Combine Ingredients: In a medium saucepan, combine cherries, sugar, lemon juice, vanilla extract, and cinnamon (if using). Stir to mix well.
  2. Simmer: Place the saucepan over medium heat and simmer for 10-15 minutes, stirring occasionally, until the cherries release their juices and the mixture thickens slightly.
  3. Add Cornstarch (Optional): If using, dissolve cornstarch in 2 tablespoons of water. Add this mixture to the saucepan and cook for an additional 2-3 minutes, stirring constantly, until the compote thickens.
  4. Cool and Store: Remove from heat and allow the compote to cool to room temperature. Transfer to a clean jar or container and refrigerate. Serve warm or chilled!

Notes

Other Fruits: Mix in other fruits like blueberries, strawberries, or raspberries to create a mixed berry compote.

Spices: Add a pinch of nutmeg, ginger, or cloves for extra depth of flavor.

Sweetener Alternatives: Substitute granulated sugar with honey or maple syrup for a healthier twist.
