Easy Graham Cracker Toffee is a quick and irresistible dessert that combines the crunch of graham crackers with the rich sweetness of toffee and the nuttiness of pecans. It’s a delightful treat that’s perfect for snacking, gifting, or as a simple party dessert!

Ingredients

1 (14.4-ounce) box graham crackers

1 cup unsalted butter

1 cup firmly packed light brown sugar

1 cup chopped pecans

½ teaspoon vanilla extract

Instructions

  1. Preheat the oven to 400°F (200°C). Line a jelly roll pan (10″x15″x1″) with aluminum foil and lightly spray with nonstick cooking spray.
  2. Place a single layer of graham crackers on the prepared pan, covering the bottom from edge to edge. Break the crackers as needed to fit the pan.
  3. In a medium-sized pot over medium-high heat, combine the butter and brown sugar. Stir constantly until the mixture begins bubbling, then allow it to boil for 3 minutes.
  4. Remove the toffee mixture from the heat and stir in the vanilla extract and chopped pecans.
  5. Carefully pour the toffee mixture evenly over the graham crackers and spread to cover as much as possible.
  6. Place the pan in the oven and bake for 5 minutes.
  7. Remove from the oven and let the toffee cool completely before breaking into pieces.
  8. Store in an airtight container for up to 1 week.

Notes

For extra sweetness, drizzle melted chocolate over the cooled toffee.
