These famous cream puffs are a classic dessert featuring a crispy, airy pastry filled with smooth, homemade vanilla pudding. Perfect for any occasion, these elegant cream puffs are easy to make, deliciously light, and a guaranteed hit at any gathering.

Ingredients

For the Cream Puffs:

1 stick butter (½ cup)

1 cup water

1 tsp vanilla

1 cup flour

4 eggs

For Mom’s Celebrated Filling:

½ quart (2 cups) heavy cream

1 package (3.4 ounces) instant vanilla pudding

⅓ cup milk

Instructions

  1. Preheat your oven to 400°F (200°C).

  2. In a saucepan, bring the water, butter, and vanilla to a boil.

  3. Add flour and stir constantly until the mixture forms a ball and pulls away from the sides of the pot.

  4. Remove from heat and let the dough cool for 5 minutes.

  5. Beat in the eggs one at a time until the mixture is smooth and glossy.

  6. Drop tablespoonfuls of dough onto a parchment-lined baking sheet (about 8 large puffs).

  7. Bake for 40 minutes, or until puffs are golden brown and puffed up.

  8. Optional: Poke each puff with a toothpick and return them to the oven with the door slightly ajar to cool. This prevents deflation.

Notes

Chocolate Cream Puffs: Drizzle melted chocolate over cooled puffs for a rich twist.

Fruit Filling: For a fruity variation, add whipped cream and fresh berries as the filling.
