Ingredients

For the Peanut Butter Bars:

  • 2 ½ cups all-purpose flour
  • ½ teaspoon baking soda
  • 1 teaspoon salt
  • ¾ cup unsalted butter, at room temperature
  • ¾ cup smooth peanut butter
  • ½ cup sugar
  • 1 cup packed light brown sugar
  • 2 large eggs, at room temperature
  • 2 teaspoons vanilla extract
  • 1 (7-ounce) jar Marshmallow Fluff, for topping

For the Peanut Butter Filling:

  • ½ cup smooth peanut butter
  • 3 tablespoons unsalted butter, at room temperature
  • 1 ½ cups powdered sugar, sifted
  • 3 tablespoons heavy cream
  • ½ teaspoon vanilla extract

Instructions

  • Preheat oven: Set the oven to 350°F (175°C). Grease and line a 9×9-inch baking pan with parchment paper, leaving an overhang for easy removal.
  • Mix dry ingredients: In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  • Prepare dough: In a large bowl, cream together butter, peanut butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes). Add eggs, one at a time, beating well after each addition. Stir in vanilla extract.
  • Combine wet and dry ingredients: Gradually add the flour mixture to the wet ingredients and mix until just combined.
  • Bake: Press dough evenly into the prepared pan and bake for 25-30 minutes or until lightly browned and a toothpick inserted comes out clean. Let it cool slightly.
  • Make peanut butter filling: In a bowl, beat together peanut butter and butter until smooth. Add powdered sugar, vanilla extract, and 2 tablespoons of heavy cream. Beat until smooth, adding an additional tablespoon of heavy cream for spreadability.
  • Spread filling: Spread the peanut butter filling over the warm bars with a spoon or offset spatula.
  • Top with marshmallow fluff: Warm the marshmallow fluff in the microwave for a few seconds to make it easier to spread. Spread it over the peanut butter filling.
  • Cool and serve: Allow bars to cool completely before slicing into squares. Serve at room temperature.
