Ingredients

  • 1 pound ground beef
  • 1 cup long-grain white rice
  • 2 cups beef broth
  • 1 large onion, thinly sliced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • 1 cup shredded Swiss cheese
  • 1/2 cup French fried onions (for topping)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. In a large skillet, heat olive oil over medium heat. Add the sliced onions and sauté for 10-12 minutes until caramelized and golden brown.
  3. Add the ground beef to the skillet with the onions. Cook until browned and fully cooked, about 5-7 minutes. Drain any excess fat.
  4. Season the beef and onion mixture with garlic powder, onion powder, thyme, salt, and pepper. Stir to combine and set aside.
  5. In a large mixing bowl, combine the beef and onion mixture with uncooked rice and beef broth. Stir well to coat the rice with the flavors.
  6. Transfer the mixture to the greased baking dish and spread evenly. Cover with aluminum foil.
  7. Bake for 30 minutes.
  8. Remove the foil, sprinkle shredded Swiss cheese over the top, and return to the oven. Bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
  9. Let the casserole sit for 5 minutes, then top with French fried onions and garnish with fresh parsley before serving.
