Ingredients

½ cup granola (optional, for texture)

Instructions

  1. Prepare the Pineapple: Drain excess juice from diced pineapple to avoid watery slices after freezing.
  2. Make the Cream Mixture: Combine chilled coconut cream, vanilla yogurt, honey (or maple syrup), and vanilla extract in a medium bowl. Whisk until smooth.
  3. Combine Ingredients: Gently fold diced pineapple into the cream mixture, adding granola for extra texture if desired.
  4. Prepare the Mold: Line a loaf pan or small rectangular dish with parchment paper for easy removal.
  5. Fill the Mold: Pour the pineapple-cream mixture into the prepared pan and smooth with a spatula. Tap to remove air bubbles.
  6. Freeze: Cover with plastic wrap and freeze for at least 4 hours or until completely solid.
