Ingredients

2 ripe peaches, pitted and sliced

1 cup Greek yogurt (plain or vanilla)

2 tablespoons honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

Fresh mint leaves for garnish (optional)

1 cup granola or crushed nuts (optional topping)

6 popsicle molds and sticks

Instructions

  1. Prepare the peaches: Wash the peaches thoroughly. Slice them into rings about 1/2 inch thick, removing the pit to create rings.
  2. Blend the yogurt mixture: In a medium-sized bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract. Stir well until the ingredients are fully mixed, creating a smooth mixture.
  3. Assemble the pops: Place a peach ring at the bottom of each popsicle mold. Carefully pour the yogurt mixture over the peach rings until they are submerged. Leave enough room at the top for another peach ring to be added.
  4. Add more peaches: For a layered effect, add another peach ring on top of the yogurt mixture in each mold. Gently press to ensure the peach rings adhere to the yogurt.
  5. Insert sticks: Once the molds are filled, insert the popsicle sticks into the center of each mold, ensuring they stand straight.
  6. Freeze: Place the molds in the freezer for at least 4-6 hours, or until completely frozen.
  7. Release the pops: To remove the pops from the molds, run warm water on the outside of each mold for a few seconds to loosen them. Then, gently pull the pops out.
  8. Add toppings: If desired, sprinkle granola or crushed nuts on top for added texture. You can also garnish with fresh mint leaves.
