A refreshing fruit pizza with a brown sugar cookie crust, cream cheese frosting, and a colorful array of fresh fruit toppings, perfect for any gathering or special occasion.

Ingredients

1 ½ cups all-purpose flour (plus extra for rolling)

1 teaspoon baking powder

¼ teaspoon salt

½ cup (1 stick) unsalted butter, softened

½ cup packed light brown sugar

1 egg

1 teaspoon vanilla extract

½ teaspoon almond extract

1 (8-ounce) package low-fat cream cheese

23 tablespoons maple syrup or honey (or 1 cup powdered sugar)

1 teaspoon vanilla extract

Pinch of fine sea salt

Fresh strawberries (or blueberries, raspberries, blackberries, or other fruits)

Optional: Fresh honey for drizzling

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a quarter sheet pan, a 9 x 13-inch baking dish, or a 12-inch round pizza pan with cooking spray.
  2. For the cookie dough, whisk together flour, baking powder, and salt in a medium bowl. In a large bowl, beat butter and brown sugar on medium speed until light and fluffy (about 2 minutes). Add egg, vanilla, and almond extract, and beat until combined. Gradually add the dry ingredients and mix on low speed until just combined.
  3. Press the dough evenly into your prepared pan. Poke a few holes in the dough with a fork. Bake for 15-18 minutes until lightly golden. Let the cookie crust cool for about 20 minutes on a wire rack.
  4. For the frosting, whisk together cream cheese, maple syrup (or honey), vanilla, and sea salt until smooth and creamy.
  5. Once the cookie crust is cooled, spread the cream cheese frosting evenly on top. Arrange fresh fruit on top, and drizzle with honey if desired.
  6. Slice and serve the fruit pizza, and enjoy!

Notes

Use a variety of fruits like kiwi, pineapple, or peaches for a colorful touch.

For a gluten-free version, swap out the all-purpose flour with a gluten-free blend.

To lighten the frosting, substitute cream cheese with whipped cream or Greek yogurt.
