Ingredients

For the Meatball Bombs:

  • 12 dinner rolls
  • 12 cooked meatballs
  • 2 cups shredded mozzarella cheese
  • 1 teaspoon Italian seasoning
  • Cooking spray
  • Fresh parsley (optional, for garnish)

For the Garlic Butter:

  • ½ cup salted butter
  • 3 cloves garlic, finely minced
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon dried parsley
  • ½ teaspoon dried oregano
  • ¼ teaspoon ground black pepper

For the Sauce:

  • ½ cup sun-dried tomato pesto
  • 2 cups marinara sauce
  • 1 tablespoon olive oil

Instructions

  • Prepare the Meatballs:

    • If using frozen meatballs, cook them according to package instructions. If using homemade meatballs, cook thoroughly and set aside.
  • Make the Garlic Butter:

    • In a small saucepan, melt butter over medium heat.
    • Add minced garlic and sauté until fragrant. Remove from heat and stir in Parmesan cheese, dried parsley, oregano, and black pepper.
  • Prepare the Sauce:

    • In a bowl, mix sun-dried tomato pesto, marinara sauce, and olive oil.
  • Preheat the Oven:

    • Set oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  • Hollow Out the Rolls:

    • Use a sharp knife to cut a hole in the top of each roll, making space for the meatballs without cutting through the bottom.
  • Assemble the Meatball Bombs:

    • Brush the inside of each hollowed roll with garlic butter.
    • Add a spoonful of sauce, place a meatball inside, and top with more sauce.
    • Sprinkle shredded mozzarella over the top and dust with Italian seasoning.
  • Bake:

    • Arrange the stuffed rolls in the prepared baking pan.
    • Bake for 10-12 minutes until the cheese is melted and bubbly.
  • Serve:

    • Remove from the oven, garnish with fresh parsley, and serve hot.

Notes

  • Use soft yet sturdy dinner rolls that can hold the fillings without becoming soggy.
  • Brush extra garlic butter on the outside for extra crispiness.
  • Adjust spice levels by adding red pepper flakes or spicy marinara.
