This Garlic Butter Shrimp Scampi Lasagna is a decadent, flavor-packed dish featuring layers of buttery garlic shrimp, creamy ricotta, and melty mozzarella. A luxurious seafood lasagna perfect for dinner parties, special occasions, or cozy nights in.
12–15 sheets lasagna noodles (oven-ready or pre-cooked)
1 lb medium or large shrimp, peeled and deveined
1/2 cup unsalted butter
4–6 garlic cloves, minced
1/4 cup fresh parsley, chopped
1 cup Parmesan cheese, freshly grated
15 oz ricotta cheese
2 cups shredded mozzarella cheese
Salt and pepper, to taste
Preheat Oven: Set to 375°F (190°C).
Cook Shrimp: In a skillet, melt butter and sauté garlic for 1-2 minutes until fragrant. Add shrimp, season with salt and pepper, and cook until pink (about 3–4 minutes). Stir in chopped parsley and remove from heat.
Make Ricotta Mixture: In a bowl, mix ricotta cheese with half the Parmesan and season lightly with salt and pepper.
Assemble Lasagna:
Spread a spoonful of the shrimp and butter mixture on the bottom of a baking dish.
Add a layer of noodles, spread ricotta mixture, then a layer of shrimp.
Repeat layers, ending with noodles topped with mozzarella and remaining Parmesan.
Bake: Cover with foil and bake for 25 minutes. Uncover and bake for an additional 15–20 minutes until bubbly and golden.
Cool & Serve: Let the lasagna rest for 10 minutes before slicing and serving.
