This Gluten-Free Matcha Banana Bread is a delicious twist on the classic banana bread, combining the earthy flavor of matcha green tea with the sweetness of ripe bananas. Moist, flavorful, and naturally gluten-free, this bread is perfect for breakfast or as a snack anytime. Plus, it’s dairy-free and can be made nut-free, making it accessible for many dietary needs.

Ingredients

  • 2 ripe bananas
  • 1 ¾ cups gluten-free flour blend
  • ¼ cup almond flour (or additional gluten-free flour blend)
  • 1 ½ teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons matcha green tea powder
  • ½ teaspoon salt
  • 1 cup sugar (cane sugar recommended)
  • 2 large eggs
  • ½ cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • ¼ cup non-dairy milk (such as almond milk)

Instructions

  • Preheat your oven to 350°F (175°C). Grease or line a loaf pan with parchment paper.
  • In a bowl, mash the bananas until smooth.
  • In another bowl, whisk together the gluten-free flour blend, almond flour, matcha powder, baking powder, baking soda, and salt.
  • In a separate large bowl, beat the eggs, then add the sugar, melted coconut oil, vanilla extract, and non-dairy milk. Mix well.
  • Add the mashed bananas to the wet ingredients and mix until combined.
  • Gradually add the dry ingredients into the wet mixture, stirring until smooth.
  • Pour the batter into the prepared loaf pan and spread evenly.
  • Bake for 50-60 minutes, or until a toothpick inserted comes out clean.
  • Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

  • Use half the sugar for a less sweet version of this bread.
  • If you’re not a fan of matcha, feel free to omit it and still enjoy a delicious banana bread.
  • For extra texture and flavor, add chocolate chips, nuts, or dried fruit to the batter.
