These Gobble Up Granola Snacks are chewy, flavorful bars made with oats, crispy rice cereal, raisins, and peanut butter. A quick, no-bake treat that’s perfect for a snack or energy boost!

Ingredients

2 ½ cups crispy rice cereal

2 cups quick-cooking oats

½ cup raisins

½ cup packed brown sugar

½ cup light corn syrup

½ cup crunchy peanut butter

1 teaspoon vanilla extract

Instructions

  1. In a large bowl, stir together the crispy rice cereal, oats, and raisins. Set aside.
  2. Grease a 9×13-inch baking dish with cooking spray.
  3. In a small saucepan over medium heat, combine the brown sugar and corn syrup. Heat just until boiling, then remove from heat.
  4. Stir in the peanut butter and vanilla extract until smooth.
  5. Pour the peanut butter mixture over the cereal and oat mixture. Mix well until everything is evenly coated.
  6. Press the mixture into the prepared baking dish using the back of a large spoon.
  7. Allow the mixture to cool completely, then cut into squares and enjoy!

Notes

Add dried cranberries, chopped dates, or apricots for different fruit flavors.

Use almond butter or cashew butter for a new twist.

For chocolate lovers, stir in chocolate chips or drizzle melted chocolate on top.

Make it gluten-free by using gluten-free oats and rice cereal.
