Ingredients

2 lbs boneless skinless chicken breasts

1/2 cup plain Greek yogurt

4 cloves garlic, minced

1/4 cup olive oil

1 teaspoon lemon zest

3 tablespoons fresh lemon juice

2 tablespoons apple cider vinegar

1 1/2 teaspoons dried oregano

1/2 teaspoon paprika

1 1/2 teaspoons kosher salt

1/2 teaspoon black pepper

Crumbled feta cheese, for garnish

Chopped fresh parsley, for garnish

Tzatziki sauce, for serving

Hummus, for serving

Pita bread, for serving

Greek salad, for serving

Instructions

  1. Cut the chicken breasts into 1-inch pieces and place in a large Ziploc bag, bowl, or shallow baking dish.
  2. In a medium bowl, whisk together the Greek yogurt, minced garlic, olive oil, lemon zest, fresh lemon juice, apple cider vinegar, dried oregano, paprika, salt, and black pepper. Whisk until smooth and well combined.
  3. Pour the marinade over the chicken and mix well to coat. Cover or seal and refrigerate for 30 minutes to 4 hours.
  4. If using wooden skewers, soak them in water for at least 20 minutes to prevent burning.
  5. Thread the marinated chicken onto skewers, using about 4 ounces of chicken per skewer. Discard any leftover marinade.
  6. Preheat a grill or grill pan to medium-high heat and brush with olive oil. Grill the kabobs for about 10 minutes, turning every couple of minutes, until fully cooked.
  7. Transfer kabobs to a serving platter. Garnish with crumbled feta and chopped parsley. Serve warm with tzatziki sauce, and optionally with hummus, pita, or a Greek salad.

Notes

Bake at 400°F for 20–25 minutes as an alternative to grilling.

Marinate overnight for deeper flavor and more tenderness.

Use chicken thighs, lamb, or tofu as an alternative to chicken breasts.

Store leftovers for up to 3 days in the fridge or freeze for up to 2 months.
