Green Cake (Lime Cake) is a soft, moist cake flavored with fresh lime and lime gelatin powder for a vibrant green color and zesty taste, topped with a tangy lime gelatin frosting. Perfect for celebrations or a refreshing dessert.

Ingredients

2 large eggs, room temperature

3/4 cup (180g) milk, room temperature

1/3 cup (75g) vegetable oil (canola, corn, or sunflower)

1/4 cup (60g) freshly squeezed lime juice

1 tablespoon lime zest

2 tablespoons (24g) lime flavored gelatin powder

1 1/2 cups (180g) all-purpose flour

3/4 cup (150g) granulated sugar

2 teaspoons (8g) baking powder

1/4 teaspoon (1g) salt

1 1/3 cups (397g) sweetened condensed milk (for frosting)

1/3 cup (80g) freshly squeezed lime juice (for frosting)

1 tablespoon (12g) lime flavored gelatin powder (for frosting)

2 tablespoons (30g) hot water (for frosting)

Instructions

  1. Preheat oven to 350°F (180°C) and line an 8-inch (20cm) square pan with parchment paper.
  2. Whisk eggs in a large bowl until slightly frothy.
  3. Add milk, vegetable oil, lime juice, lime zest, and lime gelatin powder; whisk to combine.
  4. Sift flour, sugar, baking powder, and salt over wet ingredients; gently whisk until just combined.
  5. Pour batter into prepared pan; bake for 30 minutes or until a toothpick comes out clean.
  6. Cool cake completely at room temperature.
  7. For frosting: whisk condensed milk and lime juice until slightly thickened.
  8. Dissolve lime gelatin powder in hot water; stir into condensed milk mixture until combined.
  9. Spread frosting evenly over cooled cake.
  10. Refrigerate at least 2 hours to set frosting before serving.
