Green Cake Pops are festive, bite-sized treats featuring moist cake mixed with creamy frosting, dipped in vibrant green candy coating, and decorated with sprinkles and chocolate gold coins. These fun and customizable cake pops are perfect for St. Patrick’s Day celebrations!

Ingredients

  • 1 box cake mix (plus ingredients required to bake)
  • ½ cup vanilla frosting
  • 20 oz green candy melts (about 3 bags)
  • 6-inch lollipop sticks (about 40)
  • Chocolate gold coins
  • 3 tablespoons white sprinkles

Instructions

  1. Prepare the Cake Base: Bake the cake according to the package instructions. Let it cool completely, then crumble it into fine crumbs using your hands or a mixer.
  2. Mix with Frosting: Add ¼ cup vanilla frosting to the crumbled cake and mix. Gradually add more frosting if needed until the mixture holds together like dough.
  3. Form Cake Balls: Roll into 1 to 1.5-inch balls and place on a parchment-lined baking sheet.
  4. Chill: Refrigerate the cake balls for 15 minutes to firm up.
  5. Melt Candy Coating: Microwave the green candy melts in 30-second intervals, stirring between each, until smooth.
  6. Insert Sticks: Dip the tip of a lollipop stick into the melted candy, then insert it halfway into a cake ball. Repeat for all cake balls.
  7. Coat Cake Pops: Dip each cake pop into the melted candy, ensuring full coverage. Gently tap off excess.
  8. Decorate: While the coating is still wet, sprinkle white sprinkles and press a chocolate gold coin into the side.
  9. Set: Allow the cake pops to set at room temperature or in the refrigerator before serving.
