This Grilled Cheese and Vegetable Sandwich offers a delightful twist on the classic, combining creamy mayonnaise, low-fat white cheddar cheese, and savory roasted vegetables like eggplant, zucchini, and mushrooms. Quick, customizable, and packed with flavor, it’s the perfect healthy lunch or snack.

Ingredients

  • 1 tablespoon Hellmann’s® or Best Foods® Real Mayonnaise
  • 2 slices crusty whole grain bread
  • 1 ounce sliced low-fat white cheddar cheese
  • 1 cup sliced roasted vegetables (such as eggplant, zucchini, and mushrooms)

Instructions

  1. Spread one slice of bread with Hellmann’s® or Best Foods® Real Mayonnaise.
  2. Place the mayonnaise-side down in a hot skillet. Add sliced cheese and roasted vegetables on top of the bread.
  3. Spread the other slice of bread with mayonnaise and place it mayonnaise-side up on top of the vegetables.
  4. Cook the sandwich until the bottom side is lightly browned. Flip the sandwich over and cook until the cheese is melted and the other side is golden brown.
  5. Serve hot and enjoy!

TIP: To roast or grill vegetables, preheat the oven or grill to 400°F. Brush the vegetables with oil and season with salt and pepper. Roast or grill, turning as needed, until golden and tender. Toss with chopped fresh herbs and a squeeze of lemon juice for extra flavor.
