Ingredients

For the Chicken:

  • 1 lb boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper

For the Creamy Garlic Sauce:

  • 1/2 cup mayonnaise
  • 2 tbsp sour cream
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1/4 tsp salt
  • Fresh parsley, chopped (optional, for garnish)

Instructions

Marinate the Chicken:

  1. In a large bowl, mix olive oil, paprika, garlic powder, salt, and black pepper.
  2. Add chicken cubes and toss until evenly coated.
  3. Let the chicken marinate for at least 15 minutes at room temperature, or up to 2 hours in the refrigerator for enhanced flavor.

Prepare the Sauce:

  1. In a small bowl, whisk together mayonnaise, sour cream, minced garlic, lemon juice, Dijon mustard, and salt.
  2. Taste and adjust seasoning if needed. Set aside.

Grill the Chicken:

  1. Preheat a grill or grill pan over medium-high heat.
  2. Add marinated chicken cubes and grill for about 3–4 minutes per side, or until fully cooked and grill marks appear.
  3. (For skewers: Thread chicken cubes onto skewers before grilling.)

Serve with Sauce:

  1. Place the grilled chicken bites on a serving platter.
  2. Drizzle with creamy garlic sauce or serve it on the side for dipping.
  3. Garnish with chopped parsley, if desired.

Notes

  • Dairy-Free Option: Use dairy-free mayo and sour cream alternatives.
  • Meal Pairing: Serve with grilled veggies, quinoa, or a fresh salad for a balanced meal.
  • Cooking Alternative: Can be made in a skillet over medium-high heat instead of a grill.
