This Grilled Neapolitan Cake Sandwich Melt combines the nostalgic flavors of chocolate, vanilla, and strawberry ice cream between buttery, golden-toasted brioche slices. The result is a gooey, crispy, and irresistibly indulgent dessert that’s as fun to make as it is to eat.

Ingredients

4 slices brioche or white bread

4 tbsp unsalted butter, softened

1 cup vanilla ice cream, slightly softened

1 cup chocolate ice cream, slightly softened

1 cup strawberry ice cream, slightly softened

1 cup fresh strawberries, sliced

1/4 cup chocolate syrup

1/4 cup strawberry sauce

Powdered sugar, for dusting (optional)

Instructions

  1. Prep the bread: Spread 1 tbsp softened butter on one side of each bread slice. The buttered sides will be the outer layer for grilling.
  2. Layer the ice cream: On one slice of bread, spread vanilla ice cream; on another, chocolate ice cream. Add strawberry ice cream in the middle to create the classic Neapolitan trio.
  3. Add fresh strawberries: Scatter sliced strawberries over the strawberry ice cream layer and drizzle chocolate syrup and strawberry sauce for added richness.
  4. Assemble the sandwich: Top with another slice of bread, buttered side facing out, and press gently to seal. Repeat for the second sandwich.
  5. Grill the sandwiches: Heat a skillet or griddle over medium-low heat. Grill each sandwich for 3–4 minutes per side until golden and crisp, reducing the heat to low if needed to prevent over-melting.
  6. Serve: Slice in half, dust with powdered sugar, and serve immediately with extra sauce for dipping.
