Ground Beef Zucchini Casserole is a satisfying and flavorful dish that combines seasoned ground beef with fresh zucchini, layered with creamy sour cream and melted cheese. This hearty yet light casserole is perfect for a weeknight dinner, providing comfort food without the heaviness.

Ingredients

1 lb ground beef

2 medium zucchinis, sliced

1 small onion, chopped

2 cloves garlic, minced

1 cup shredded cheddar cheese

½ cup grated Parmesan cheese

½ cup sour cream

½ cup marinara or tomato sauce

½ tsp dried basil

½ tsp dried oregano

Salt and pepper to taste

1 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet over medium heat, add olive oil and sauté onions and garlic until fragrant, about 2-3 minutes.
  3. Add ground beef and cook until browned, breaking it up with a spoon as it cooks. Season with salt, pepper, basil, and oregano.
  4. Stir in marinara sauce and simmer for 5 minutes.
  5. In a greased 9×13 baking dish, layer half of the sliced zucchini.
  6. Spread half of the beef mixture over the zucchini.
  7. Spread half of the sour cream and sprinkle with half of the cheddar cheese.
  8. Repeat the layers with the remaining zucchini, beef mixture, sour cream, and cheese.
  9. Sprinkle Parmesan cheese evenly on top.
  10. Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 10 minutes or until cheese is bubbly and golden.
  11. Let sit for 5 minutes before serving.

Notes

For a low-carb version, use a sugar-free tomato sauce.

Feel free to add additional vegetables like bell peppers, mushrooms, or spinach.

If you prefer a spicier version, add red pepper flakes or jalapeños.

Feel free to swap the cheese for mozzarella or a cheese blend.
