1 (10 oz) package white mushrooms, halved or quartered
1 tablespoon extra-virgin olive oil
1/2 teaspoon paprika
3 cloves garlic, finely chopped
1 carrot, diced (1/4-inch pieces)
1 small onion, chopped
1 tablespoon tomato paste
1 (15 oz) can low-sodium beef broth
1 tablespoon Worcestershire sauce
2 cups dried penne pasta
2 ounces cream cheese, room temperature
1/4 cup sour cream
3 tablespoons chopped fresh chives
3 tablespoons chopped fresh parsley
Brown the Beef: Heat a large nonstick skillet over medium-high heat. Add the ground beef, season with salt and pepper, and cook until browned, breaking it into pieces, about 5 minutes. Transfer the beef to a bowl, leaving the drippings in the pan. Reduce heat to medium.
Cook the Mushrooms: Add the mushrooms to the skillet, season with salt, and cook until golden, about 8-10 minutes. Transfer to the bowl with the beef.
Cook Vegetables: Add olive oil, paprika, garlic, carrot, and onion to the skillet. Cook until the carrot softens and the onion is lightly browned, about 10 minutes.
Add Tomato Paste and Broth: Stir in the tomato paste and cook for 2-3 minutes. Add the beef broth, Worcestershire sauce, and 1½ cups of water. Bring to a simmer, then stir in the pasta. Cover and cook according to the pasta package directions until al dente.
Combine: Uncover and stir in the reserved beef and mushrooms. Cook until everything is heated through.
Finish the Sauce: Remove from heat and stir in the cream cheese, sour cream, chives, and parsley until the sauce is creamy. Season with salt and pepper to taste.
Serve: Garnish with extra parsley and chives and serve immediately.
