Ingredients

  • 2 1/4 cups all-purpose flour
  • 2 teaspoons cornstarch
  • 1/4 teaspoon salt
  • 1 cup unsalted butter, at room temperature
  • 1/3 cup light brown sugar, packed
  • 1/3 cup granulated sugar
  • 1 large egg yolk
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 teaspoons almond extract
  • 1/2 cup raspberry jam

Instructions

  • Line two baking sheets with parchment paper.
  • In a medium bowl, whisk together the flour, cornstarch, and salt. Set aside.
  • In a large bowl, cream the butter, light brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).
  • Mix in the egg yolk, vanilla extract, and almond extract until combined.
  • Gradually add the dry ingredients to the wet mixture, mixing on low speed until the dough forms.
  • Roll dough into balls (about 1 tablespoon each) and place them 2 inches apart on the baking sheets.
  • Use your pinky finger or a small spoon to press two indentations into each dough ball, forming a heart shape.
  • Freeze the dough for 30 minutes to prevent spreading during baking.
  • Preheat the oven to 350°F (175°C).
  • Fill each heart indentation with 1/2 teaspoon of raspberry jam.
  • Bake for 10-12 minutes, or until the edges are golden and set.
  • Let cool on the baking sheets for 5 minutes before transferring to a wire rack.
