Hibachi Chicken is a flavorful stir-fried dish made with tender chicken, sautéed vegetables, and a rich soy-ginger sauce. This easy, quick recipe delivers the authentic taste of a Japanese steakhouse right at home. Perfect for weeknight dinners or entertaining guests.

Ingredients

For the Chicken Marinade:

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

1 tbsp vegetable oil

2 tbsp soy sauce

1 tbsp butter

1 tbsp sesame oil

2 garlic cloves, minced

1 tsp ground ginger

1 tbsp rice vinegar

1 tbsp mirin or honey

Salt and pepper to taste

2 cups zucchini, sliced

1 cup mushrooms, sliced

1/2 onion, sliced

Optional: sesame seeds and chopped scallions for garnish

Instructions

  1. Cook the Chicken: Heat the vegetable oil in a large skillet or hibachi grill over medium-high heat. Add the chicken pieces and season with salt and pepper. Cook for about 5-7 minutes, or until golden brown and fully cooked. Push chicken to one side of the pan.
  2. Add Butter and Aromatics: Add butter, minced garlic, and sesame oil to the pan. Stir to melt the butter and infuse the garlic and sesame oil into the chicken.
  3. Add the Sauce: Stir in soy sauce, rice vinegar, mirin (or honey), and ground ginger. Mix to coat the chicken evenly and let simmer for a few minutes.
  4. Cook the Vegetables: Add zucchini, mushrooms, and onion to the pan. Cook for another 5 minutes, stirring occasionally, until vegetables are tender-crisp.
  5. Serve: Remove from heat, and serve hot. Optionally, garnish with sesame seeds and chopped scallions. Pair with fried rice or noodles for a complete meal.

Chicken Thighs: For a juicier dish, use chicken thighs instead of chicken breasts.
