These Hogwarts Butterbeer Cheesecake Pops capture the magic of butterbeer in creamy, bite-sized cheesecake form. With a buttery graham crust, smooth butterscotch filling, and sweet chocolate coating, they’re an enchanting treat perfect for any Harry Potter fan or themed party.

Ingredients

For the Cheesecake Filling:

8 oz cream cheese, softened

1/2 cup powdered sugar

1/2 cup butterscotch sauce (store-bought or homemade)

1 tsp vanilla extract

1 cup whipped cream (heavy cream whipped until stiff peaks form)

For the Crust:

1 cup graham cracker crumbs

1/4 cup sugar

1/2 cup unsalted butter, melted

For the Coating:

1/2 cup white chocolate chips

2 tbsp butterscotch chips (optional)

Sprinkles or crushed graham crackers for garnish (optional)

Instructions

  1. In a bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until evenly coated.
  2. Line a baking sheet with parchment paper. Scoop small portions of crust mixture, roll into balls, flatten into discs, and place on the sheet. Chill for 30 minutes.
  3. In another bowl, beat cream cheese until smooth. Add powdered sugar, butterscotch sauce, and vanilla extract; mix well.
  4. Gently fold in whipped cream until the filling is light and fluffy.
  5. Top each chilled crust disc with a spoonful of cheesecake filling and spread evenly.
  6. Insert a popsicle stick into each, then freeze for 2–3 hours until firm.
  7. Melt white chocolate chips and butterscotch chips in 20-second microwave intervals, stirring until smooth.
  8. Dip each frozen pop into the melted coating, ensuring full coverage.
  9. Sprinkle with crushed graham crackers or sprinkles while coating is still wet.
  10. Place back on parchment-lined sheet and freeze another 30 minutes until coating hardens. Serve chilled.

Notes

Drizzle extra butterscotch sauce or dust with edible gold powder for a magical touch.

Color the coating to match Hogwarts house colors for themed parties.

Use caramel sauce instead of butterscotch for a similar flavor.

Ensure pops aren’t rock-solid frozen when dipping to prevent coating cracks.

For a dairy-free version, use vegan cream cheese, coconut whipped cream, and dairy-free chocolate.

Store in an airtight container in the freezer for up to one week.
