Homemade Ladyfinger Cookies are light, crispy, and airy cookies that provide the perfect texture and flavor for desserts like Tiramisu or fruit trifles. Simple to make, these cookies are a versatile and essential addition to layered desserts.

Ingredients

3 large eggs (free-range)

2/3 cup granulated sugar

Pinch of salt

1/4 tsp vanilla extract

1 cup all-purpose flour (sifted)

2 tbsp cornstarch

1 tsp lemon zest (optional)

Powdered sugar (for dusting)

Instructions

  1. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. Separate the egg yolks and whites. Whip the egg yolks with half of the sugar until pale and fluffy. Beat the egg whites with the remaining sugar until stiff peaks form.
  3. Fold the whipped egg whites gently into the egg yolk mixture. In a separate bowl, mix flour, cornstarch, and salt, and fold it into the egg mixture until combined.
  4. Fill a piping bag fitted with a 1/2-inch round tip and pipe 3-inch-long, 1-inch-wide fingers onto the baking sheets. Dust lightly with powdered sugar.
  5. Bake for 12-15 minutes, or until lightly golden and puffed. Let cool on the trays.
  6. Once cooled, store in an airtight container for up to 3 weeks or use immediately in Tiramisu or fruit trifles.

Notes

For flavored ladyfingers, experiment with almond extract or orange zest.

For a gluten-free version, substitute the all-purpose flour with a gluten-free flour blend.

For crispier ladyfingers, bake them a little longer or let them cool in the oven after turning it off.
