This **Homemade Raspberry Jam** is a simple, flavorful treat that captures the sweet and tart essence of fresh raspberries. Made with just a few ingredients, it’s quick, easy, and versatile, perfect for spreading on toast, pancakes, or as a topping for desserts.

Ingredients

4 cups fresh raspberries (or frozen, thawed)

2 cups granulated sugar

1 tablespoon lemon juice

½ teaspoon vanilla extract (optional, for added depth)

Instructions

  1. Step 1: Prep the Raspberries – If using fresh raspberries, rinse them thoroughly and let them dry. For frozen raspberries, ensure they are fully thawed and drained of excess liquid.
  2. Step 2: Cook the Jam – In a medium saucepan, combine raspberries and lemon juice. Bring to a simmer over medium heat, stirring occasionally. The raspberries will release their juices, creating a vibrant red sauce.
  3. Step 3: Add the Sugar – Once the raspberries have softened and are bubbling, add the sugar. Stir well until the sugar is fully dissolved. Continue to cook for about 15-20 minutes, stirring frequently. The jam will begin to thicken as it reduces.
  4. Step 4: Test for Doneness – To check if the jam is ready, spoon a little onto a cold plate and run your finger through it. If it wrinkles and doesn’t run back together, it’s done. If not, cook for a few more minutes and test again.
  5. Step 5: Add Vanilla (Optional) – For a richer flavor, stir in vanilla extract just before removing the jam from heat. This step adds depth but is optional.

Notes

If you’d like a smoother jam, you can strain out the seeds, or leave them for a more rustic texture.

For a thicker jam, let it cook a bit longer to allow more liquid to evaporate or add pectin.
