100 g Butter, softened to room temperature
90 g Granulated sugar
175 g All-purpose flour
2 teaspoons Vanilla powder or extract
½ teaspoon Baking powder
3 tablespoons Honey or 2 tablespoons Ljus Sirap (golden syrup)
Prepare the Oven: Preheat your oven to 180°C (350°F).
Mix Butter and Sugar: Cream the softened butter and granulated sugar together in a bowl until light and fluffy.
Incorporate Wet Ingredients: Add the honey (or golden syrup) and vanilla extract to the butter-sugar mixture and mix until fully combined.
Combine Dry Ingredients: Sift together the all-purpose flour and baking powder in a separate bowl.
Form the Dough: Gradually add the dry ingredients to the butter-sugar mixture and mix until a smooth dough forms.
Shape the Cookies: Divide the dough into three equal parts. Roll each portion into a log and place them on a parchment-lined baking tray, leaving space between each log as they will spread while baking.
Flatten and Bake: Flatten the logs slightly with your fingers. Bake for 12-14 minutes, or until golden brown.
Cut and Cool: While the cookies are still warm, carefully slice the logs diagonally. Let them cool completely on a wire rack before serving.
You can brush the logs with a beaten egg and sprinkle pearl sugar before baking for an extra crunch and sweetness.
For a chocolate variation, substitute 2.5 tablespoons of flour with cocoa powder to create a chocolate twist.
