Honey Lemon Vinaigrette is a simple, flavorful dressing made with fresh lemon juice, honey, olive oil, and fresh herbs. It adds a burst of brightness to salads, roasted vegetables, and can even be used as a marinade.

Ingredients

1/4 cup fresh lemon juice (or lime juice)

2 tbsp honey (or maple syrup for a vegan option)

1/3 cup olive oil (or half olive oil, half avocado or grapeseed oil)

1 pinch salt

1/4 tsp black pepper

1 tsp fresh thyme, chopped

1 tsp fresh oregano, chopped

Instructions

  1. In a small bowl or jar, whisk together the fresh lemon juice and honey until smooth and well combined.
  2. Slowly drizzle in the olive oil while continuing to whisk. This helps the oil blend with the lemon and honey, creating a smooth emulsion.
  3. Add the freshly chopped thyme and oregano to the mixture, stirring to combine.
  4. Add a pinch of salt and black pepper to taste. Adjust the flavor by adding more honey for sweetness, more lemon juice for tanginess, or extra salt for seasoning.
  5. Use the vinaigrette immediately, or store it in the fridge for up to a week. Shake or stir before serving.

This vinaigrette can be stored in an airtight container in the fridge for up to a week. The ingredients may separate over time, so shake or stir before use.

If the vinaigrette is too tangy, adjust with more honey to balance the acidity.

You can use maple syrup instead of honey for a fully vegan version.

For a creamy texture, add a spoonful of Greek yogurt or Dijon mustard.

If you’d like a spicier kick, try adding red pepper flakes or cayenne pepper.
