Ice Cream Sandwich Cake Pops

A fun and delicious dessert combining the creamy goodness of ice cream sandwiches with the crunch of cake pops. These treats are coated in chocolate shell and topped with your favorite crunchy toppings.

Ingredients

6 (2.5 ounce) ice cream sandwiches

2 (7.25 ounce) bottles chocolate shell topping (such as Magic Shell®)

12 popsicle sticks

Assorted toppings such as sprinkles, crushed cookies, nuts, or crushed candy bars

Instructions

  1. Cut each ice cream sandwich in half crosswise.
  2. Insert a popsicle stick through the center of each cut end to create the pop shape.
  3. Remove the caps and seals from the shell topping bottles. Microwave the shell topping for about 8 seconds to loosen it up.
  4. Pour the shell topping into a glass measuring cup.
  5. Dip each ice cream sandwich pop into the chocolate shell topping, making sure it is completely covered. Allow any excess topping to drip off.
  6. Dip the top ends of the pops into your desired toppings, such as crushed Oreos®, sprinkles, or chopped nuts.
  7. Place the cake pops on a parchment-lined baking sheet.
  8. Freeze the pops for at least 1 hour before serving to ensure the shell hardens.

Notes

Store the cake pops in an airtight container in the freezer for up to 1 week. Place parchment paper between layers to prevent them from sticking together.

If you prefer a softer texture, allow the cake pops to thaw for a few minutes before eating.
