Ingredients

For the Crust:

1 cup graham cracker crumbs

2 tbsp butter, melted

2 tbsp sugar

For the Cheesecake Filling:

1 cup heavy cream

8 oz cream cheese, softened

¼ cup sugar

1 tsp vanilla extract

Instructions

  1. Prepare the Crust:
    In a small bowl, combine graham cracker crumbs, melted butter, and sugar. The mixture should resemble wet sand. Divide the crust mixture evenly into 2 large jars or 4 smaller jars. Place the jars in the fridge to set while you prepare the filling.

  2. Make the Cheesecake Filling:
    In a stand mixer, beat the heavy cream until soft peaks form. Remove from the bowl and set aside. In the same mixing bowl, whisk together cream cheese, sugar, and vanilla until smooth. Fold in the whipped cream by hand, then mix with a stand mixer until fully combined.

  3. Assemble the Cheesecake Jars:
    Spoon or pipe the cheesecake filling into the prepared jars on top of the crust. Refrigerate for 1-2 hours until the cheesecakes are set.

  4. Serve:
    Once chilled, serve as-is or top with whipped cream, fresh berries, or your favorite toppings like caramel or strawberry sauce.

Notes

Storage: These cheesecakes can be made up to 4 days ahead. Store them in the refrigerator, covered, until you’re ready to serve. They don’t need reheating, as they’re enjoyed chilled.
