Ingredients

  • 2 lbs rutabaga, peeled and chopped into 1-inch cubes
  • 1 cup water
  • ¼ cup half-and-half (or dairy-free alternative)
  • 1 tbsp butter (or plant-based butter)
  • ¾ tsp salt
  • ¼ tsp pepper
  • ¼ tsp garlic powder

Instructions

  • Prepare the Rutabaga:

    • Peel and chop the rutabaga into 1-inch cubes.
  • Set Up the Instant Pot:

    • Pour 1 cup of water into the Instant Pot.
    • Place a trivet inside, then add a steamer basket on top.
    • Put the rutabaga cubes into the steamer basket.
  • Pressure Cook:

    • Close and lock the lid.
    • Select high pressure and set the timer for 8 minutes.
    • Allow 10-15 minutes for pressure buildup before cooking begins.
  • Release Pressure:

    • After cooking, use the quick-release method (takes about 5 minutes).
    • Carefully remove the lid.
  • Mash the Rutabaga:

    • Drain the rutabaga and transfer to a medium bowl or back into the Instant Pot.
    • Add half-and-half, butter, salt, pepper, and garlic powder.
    • Mash until you reach your desired consistency (slightly chunky or smooth).
  • Serve:

    • Serve warm as a side dish with your favorite main course.
