Instant Pot Scalloped Potatoes are a creamy, cheesy, and easy-to-make twist on the classic dish. With just a few ingredients and a fraction of the time compared to traditional methods, these scalloped potatoes are tender, flavorful, and perfect for any holiday or gathering.

Ingredients

  • 3 pounds white potatoes (peeled and sliced into 1/4-inch rounds)
  • 1 cup chicken or vegetable broth
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon oregano
  • 1 teaspoon garlic powder
  • 4 cloves garlic (minced)
  • 1 cup heavy cream
  • 2 cups shredded yellow cheddar cheese (divided)

Instructions

  • Add the sliced potatoes, broth, salt, pepper, oregano, and garlic powder to the Instant Pot. Stir to combine.
  • Close the lid, set the valve to sealed, and cook on High Pressure for 1 minute. Allow a 3-minute natural pressure release (NPR).
  • Once done, carefully open the lid and stir in heavy cream and half of the shredded cheddar cheese.
  • Pour the mixture into a baking dish and top with the remaining cheese. Broil for a few minutes until the top is golden and bubbly.

Notes

Swap out the cheddar for other cheeses like mozzarella, gouda, or parmesan for a different flavor profile.

  • If you don’t have heavy cream, half-and-half or milk can be used, though the texture may be lighter.
