Ingredients

  • 1 ½ cups grated raw potatoes
  • 1 cup all-purpose flour
  • 1 cup leftover mashed potatoes
  • 1 large egg
  • 1 tablespoon skim milk
  • Salt and pepper to taste
  • ¼ cup olive oil

Instructions

  1. Prepare the Potatoes:

    • Grate the raw potatoes and place them in a clean kitchen towel or cheesecloth. Squeeze out excess moisture to avoid a watery batter.
  2. Mix the Batter:

    • In a large bowl, combine the grated raw potatoes, mashed potatoes, flour, egg, and milk.
    • Season with salt and pepper, and mix until the batter is smooth and well-combined.
  3. Cook the Boxty:

    • Heat olive oil in a large skillet over medium heat.
    • Spoon the batter into the skillet, flattening slightly to form pancakes.
    • Cook each side for 3-4 minutes, until golden brown and crispy.
  4. Serve:

    • Transfer the cooked boxty to a paper towel-lined plate to drain excess oil.
