This Irish Tea Cake is a light, moist dessert with a subtle sweetness, perfect for pairing with a cup of tea. With simple ingredients, this cake is easy to make and topped with a sweet glaze. It’s ideal for breakfast, snacks, or casual gatherings, and can be made ahead for easy entertaining.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup butter, softened
  • 1 cup granulated sugar
  • 2 eggs
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1/2 cup powdered sugar (for glaze)

Instructions

  • Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan.
  • Combine dry ingredients: In a medium bowl, whisk together flour, baking powder, and salt.
  • Cream butter and sugar: In a separate bowl, beat the softened butter and sugar together until light and fluffy.
  • Add eggs: Beat in eggs, one at a time, mixing well after each addition.
  • Alternate dry ingredients and milk: Stir in vanilla extract. Add the dry ingredients in three parts, alternating with the milk, beginning and ending with the dry ingredients.
  • Bake: Pour the batter into the prepared cake pan and smooth the top. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool: Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  • Prepare glaze: In a small bowl, mix powdered sugar with a little milk until smooth. Drizzle the glaze over the cooled cake.
  • Serve and enjoy: Slice and serve with a cup of tea.
